EASY MINI CHOCOLATE BANANA MUFFINS

Ingredients
3 mashed bananas
½ cup honey (or maple syrup)
1 egg at room temperature
3 Tablespoons melted butter
1 Tablespoon pure vanilla extract
1 cup flour
1/2 cup natural unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
Salt
1 cup Chocolate chips

24 cup muffin tin
Medium and large bowl
Cupcake liners
Fork
1 cup measuring cup
½ cup measuring cup
1 tablespoon measuring spoon
1 teaspoon measuring spoon
Recipe
Preheat the oven to 350°F. Line the mini Muffin tin with cupcake liners. Set aside.
In a large bowl, whisk the flour, cocoa powder, baking powder, baking soda, and salt together.
In a medium bowl, mash up bananas using a fork. Make sure to mash up any large lumps.
Once mashed, whisk in the honey, egg, butter, and vanilla extract until combined. Set aside.
Pour the wet ingredients into the dry ingredients and whisk until everything is combined. Fold in the chocolate chips, reserving some for the tops of muffin tin
Scoop the batter evenly into each liner, filling each all the way to the top.
Bake for 11-13 minutes at 350°F making sure to insert a toothpick in the center and it comes out clean. Let sit for 5 minutes then enjoy! ;]
If storing, put muffins in a food safe container and store in the refrigerator for up to 1 week.
